3–5 days in the refrigerator
After that, it needs to be cooked or frozen.
This is one of the biggest reasons we choose not to offer a “fresh” meat counter.

When you process a whole animal, you’re working with a large amount of product all at once.
For example:
A single beef can yield around 500 pounds of meat.
To keep a fresh counter stocked, that beef would need to sit and sell through over multiple days.
That’s not how we choose to handle our product.
Instead, we freeze our beef immediately at peak quality so it stays in that condition until you’re ready to use it.
Does Freezing Beef Affect Quality?
When done properly, freezing does not reduce the quality of beef.
In fact, it preserves it.
