There’s nothing quite like a hearty beef stew to bring comfort to your table, especially on those chilly days when you need a meal that warms you from the inside out. This Beef Stew with Mixed Mash is a delicious blend of tender, slow-cooked beef, vibrant herbs, and rich tomatoes, served with a creamy mix of potatoes and sweet potatoes. The addition of garlic-infused green beans on the side elevates this dish, making it both wholesome and satisfying. Serves: 4

Time: 4-6 hours 


Ingredients:

Extra virgin olive oil, for frying

1 lb of stew beef

1 red onion 

6 garlic cloves 

2- 14 oz. cans of diced tomatoes 

2 tbsp of tomato paste 

2 cup of bone broth (optional)

A small fistful of thyme 

A small fistful of rosemary 

2 bay leaf 

Salt and pepper, to taste 

Green beans 


For the mash: 

2-4 large potatoes 

2-4 large sweet potato 

Sea salt and pepper, to taste 

2 tbsp of butter (optional) 


Directions:


1). Preheat the oven to 325F. Place a casserole pot on the stovetop on a low-medium heat and add your olive oil, allowing it to heat slightly. Add the beef, and lightly brown. Chop your onion into large chunks or slices, add to the pot and cook for another 5 minutes until browned too. If you are using a slow cooker, do this part in a frying pan instead. 


2). To the casserole pot, finely mince and add four of the garlic cloves along with the diced tomatoes, tomato paste and all of the fresh herbs. Combine everything by mixing well, then season with salt and pepper. If using a slow cooker, you would add everything, along with the cooked beef chunks and onions, to the slow cooker.


3). Add the bone broth (if using) or water into the pot or slow cooker and allow it to reach a simmer. 


4). Place the casserole pot in the oven, place the lid on top and cook for roughly 4 hours. If using a slow cooker, this will take around 6 hours. The meat should be falling apart and tender when cooked.  


5). With 20 minutes to go, wash and chop the potatoes into quarters. Boil a pan of water and place the potatoes into the water and boil until soft (likely taking around 15-20 minutes). 


6). Heat a small frying pan and add a small dash of olive oil and mince your remaining garlic cloves. Add the garlic to the pan along with the green beans. Fry until they brown slightly - this will likely take around 5 minutes. 


7). Once the potatoes are soft, drain the water and mash well using a potato masher or a fork. Add the butter, sea salt and pepper, to taste.


6). To serve, plate up the mash with the stew piled on top and the green beans on the side.
