Ingredients

For the Grilled Sausages and Vegetables:
  • 4 Midwest Prime Berkshire pork sausages- choose from bratwurst, italian, or mango habanero

  • 2 zucchinis, sliced into rounds or strips

  • 2-3 bell peppers, cut into strips

  • 1 red onion, thickly sliced

  • 2 tablespoons olive oil

  • 1 tablespoon Italian seasoning

  • Salt and pepper to taste

For the Light Garlic Mustard Sauce:
  • ½ cup Greek yogurt

  • ½ cup mayonnaise

  • 1 teaspoon Dijon mustard

  • 3-4 cloves roasted garlic, mashed

  • Juice of ½ lemon (about 1 tablespoon)

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • Salt and pepper to taste

To Garnish:
  • Fresh herbs, such as microgreens, Italian parsley, or dill

Instructions

Prepare the Sauce:
  1. In a medium bowl, mix Greek yogurt, mayonnaise, Dijon mustard, mashed roasted garlic, garlic powder, onion powder, and lemon juice.
  2. Season with salt and pepper to taste.
  3. Mix well and refrigerate until ready to serve.

Grill the Sausages and Vegetables:

  1. Preheat your grill to medium-high heat (375-400°F).
  2. In a large bowl, toss the zucchinis, bell peppers, and red onion with olive oil, Italian seasoning, salt, and pepper.
  3. Place the sausages and vegetables on the grill. Cook the sausages for 12-15 minutes, turning occasionally, until they are fully cooked (internal temp: 160°F).
  4. Grill the vegetables for 8-10 minutes, turning occasionally, until they are tender and slightly charred.
Serve:
  1. Arrange the grilled sausages and vegetables on a serving platter.
  2. Drizzle the creamy garlic sauce over the sausages and vegetables.
  3. Garnish with additional fresh herbs.

The sauce will last in the fridge in a sealed container for up to 3 days. Try switching up the vegetables with whatever is in season—sweet corn, eggplant, or cherry tomatoes would be delicious!
