Pasture Raised Angus Beef

 

Here at Midwest Prime we raise black angus cattle. For the last 25 years Troy has had some kind of cow / calf herd. 

Our cows are separated into two herds and live on two different open pastures near our home in West Central Indiana. They are never confined. They graze and eat grass all of their lives. During the winter they are given hay that we grow on our farm.
    The calves are weaned from their mothers between 10-12 months old. At this time they have access to non-GMO grain that we also grow on our farm. Feeding cattle grain gives their meat marbling (the amount and distribution of intramuscular fat). Marbling is what makes the meat tender, juicy and flavorful. Marbling is the primary deciding factor on what quality grade the meat will receive from the USDA. Higher marbling equals a higher grade score.
     
    Midwest Prime cows are processed between the ages of 24 and 30 months. This is the proper time for our cattle to be processed to get the best quality. Midwest Prime cattle grade prime or choice, which is the top of the tier.
     
    Our beef are processed at a local USDA inspected facility in Indiana. They provide the highest quality and care for our meat and animals. One thing that we do for all of our beef is an extended dry-age on our rib and loin section. Dry-aging is done by the butcher. It is a process of storing meat at refrigerated temperatures to maximize tenderness, juiciness, and flavor. Our goal is to provide a premium cut of meat to our customers. We feel that this step is important.
     
    Our meat is antibiotic free. If a cow becomes sick and needs to be treated with antibiotics, we will treat it and remove it from our meat program. Our meat is also hormone free. Using growth hormones can speed up the time that it takes to get a cow to processing weight, which in turn reduces the farmers cost and increases profit. This is not how we do it on our farm. We believe that letting the cattle grow at their own speed makes for a happy, healthy cow. It also makes for top quality meat.
     
    Our meat is packaged by the cut in premium vacuum sealed packaging. No messy butcher paper. We use this type of packaging to prolong the quality and time frame of freezing. 
     
    There has been a lot of talk over the years as to whether red meat is healthy or not. Yes, yes it is! Beef is so good for you. 3 oz. of beef contains half of the protein that your body needs each day. It also contains 10 essential nutrients. It also tastes great!
